 Tarragon Chicken!

Tired of boring old grilled or baked chicken, try this tasty, easy & healthy chicken recipe that my girlfriend came across...

TARRAGON CHICKEN (serves 4)

You'll need:
4 skinless deboned chicken breasts (about 400-500g)
2 cups chicken stock
1 tablespoon tarragon vinegar
1 handful fresh tarragon or 1 teaspoon dried tarragon
black peppercorns
sea salt

Mix the stock, vinegar, tarragon, peppercorns and salt together. Place the chicken in a large pot together with the mixture and bring to the boil on the stove. Once the mixture is boiling, turn off the heat completely and leave the chicken to cook and cool in the hot broth. (We leave it overnight).

Enjoy!
