Here’s a soup recipe that I promised I would post some time back!
I’m a big fan of tomato soup, so here’s one that tastes great and is simple to make
COLD TOMATO SOUP
What you need:
1.5kg ripe tomatoes, peeled and roughly chopped
4 garlic cloves chopped
30ml olive oil
30ml balsamic vinegar
Salt & freshly ground pepper
Blitz the tomatoes, garlic and olive oil together in a food processor until smooth. Press the mixture through a sieve to remove the seeds. Stir in the vinegar and season with salt and pepper to taste. Chill and serve cold (if you want to you can heat it up) garnished with a little crumbled feta cheese (optional)
